Thank you for watching 💛 Traditional Caribbean Fruitcake (Whole Fruit Version) - Recipe INGREDIENTS Wet Ingredients 2 cups butter/margarine (soft / room temperature) 2 cups brown sugar 8 large eggs 2 tsp vanilla 2 tsps. almond essence 1/4 to 1/2 cup browning (adjust to your liking) Fruit 6 cups or 3 lbs. whole steamed fruits Dry Ingredients 4 cups or 1lb. all-purpose flour 4 tsps. baking powder Zest of 2 lemons 1 tbsp. cinnamon powder 1 tsp nutmeg 1 tsp mixed spice 1 tsp salt Extra 2–3 tbsp rum or wine for brushing after baking 🥣 METHOD 1. Preheat oven Set oven to 300°F / 150°C. Line your pan with parchment or grease & flour pans with shortening 2. Cream Butter + Sugar Beat until light and fluffy or double in volume. This gives the cake softness. 3. Add Eggs & Lemon Zest Beat in one egg at a time. Add in: vanilla browning 4. Fold in the Whole Steamed Fruits Gently mix in your chunky steamed fruits. The batter will be thick — that’s correct. 5. Add Dry Ingredients Sift together dry ingredients and fold gently into the batter. Don’t overmix. 6. Pour into prepared Tins Level the top lightly. Tap the pan on the counter to remove air bubbles. 7. Bake (Low and Slow) Bake at 300°F (150°C) for: 9–10 inch pan → 1 hour 30 min to 1 hour 50 min Deeper pans may take longer Check with a skewer — it should come out with a few moist crumbs, not wet batter. 8.
