Zucchini, Beef, Peppers, Garlic & Onion in Penne Pasta Red Sauce at Home. Simple, quick, and low-key video recipe making use of fresh zucchini, Spring onion, garlic, peppers, celery, and wine. NOTE: Video Recipe begins AFTER sautéing a portion of ingredients in a large skillet over low heat, as detailed in the recipe directions below. INGREDIENTS •16-24oz dry weight penne or pasta of choice, cooked drained (reserve 1/2 cup cooked pasta water) •2 chopped large zucchini •16oz diced smoked beef sausage (or protein of choice) •3 jalapeño pepper •1 Serrano pepper •1 small green pepper (or roughly 16oz finely chopped peppers of choice) •2 ribs diced celery •3 Spring onion diced, reserve green tips •24oz ground whole tomato •3 diced Roma tomato •12oz tomato paste •4 minced garlic cloves •¾ cup Pinot Noir or wine of choice •2 tablespoons Extra Virgin Olive oil •1 teaspoon dried Italian seasoning •1 teaspoon whole fennel seed •1 teaspoon dried basil •1 teaspoon fresh cracked black pepper •1 teaspoon salt (or to taste) •1 teaspoon granulated garlic •1 teaspoon onion powder DIRECTIONS In a large skillet, warm EVOO over low heat. Add Spring onion, and sauté until translucent. Add celery, stir briefly, add peppers, and green bell pepper stir to combine, and continue sautéing. Next, add smoked beef sausage, stirring to incorporate, and warm through. When beef sausage is warmed, add minced garlic, stir until fragrant, then add tomato paste, black pepper salt, onion powder, granulated garlic, and dried basil. Stir until paste softens and combines well. Add ground tomato (sauce), stir occasionally to combine all continuing over low heat. (POINT AT WHICH VIDEO RECIPE BEGINS) When fully combined, add dried Italian seasoning and fennel, stir briefly, then add wine, continue stirring occasionally and increase heat to medium, bringing to simmer steadily and cook off the alcohol, about 15 minutes. Do not allow to scorch, reduce heat and stir if needed. After 15 minutes reduce heat to low, stir occasionally as needed, and cover. Continue monitoring, stir as needed every 15 minutes simmering for 60 minutes allowing the flavor to develop, for up to several hours. Monitor, and stir as needed. (ideal time to prepare pasta according to manufacturers direction) After a desired simmering time, add diced Roma tomato stir briefly then add chopped zucchini, combine well, cover, and simmer until zucchini are tender to the bite, yet retain the firmness of texture, then cover and remove from heat. Combine with cooked pasta using reserved pasta boiled water to thin sauce ONLY if necessary. Top with reserved fresh herbs or finely sliced green onion greens, and cover briefly to infuse aromatics.
