⬇️⬇️English recipe follows⬇️⬇️ 三文魚頭湯、香煎三文魚尾 材料： 急凍三文魚頭半個 急凍三文魚尾一條 蕃茄2個 豆腐一磚 薑一舊 處理： 1. 三文魚，清水解凍，加入粗鹽一湯匙，乸10分鐘，去除雪味、腥味，及加入少許鹹味。 2. 蕃茄，清水洗乾淨，一開八。 3. 薑，清水洗乾淨，拍鬆。 4. 豆腐，清水洗乾淨，切粒。 5. 三文魚，刮淨魚鱗，清除內臟，清水沖洗乾淨，剪齊魚尾，擎乾水。 6. 煲滾清水一升。 烹調： 1. 大火在鑊內燒熱油一湯匙。 2. 爆香薑片。 3. 三文魚，廚紙索乾，放鑊內，轉中慢火煎香。 4. 三文魚，一面已煎至金黃色，反轉繼續煎。 5. 取出魚尾，反轉魚頭，加入豆腐繼續煎。 6. 豆腐，一面已煎至金黃色，反轉繼續煎。 7. 豆腐，兩面已煎至金黃色，加入蕃茄炒香。 8. 轉大火，加入大滾水一升，冚蓋，大火滾10分鐘。 9. 湯已滾好，倒入大碗內。 10. 三文魚尾，可伴以沙律醬食用。 11. 完成，可享用。 Salmon fish head soup, pan-fried salmon fish tail Ingredients: Frozen salmon head half No. Frozen salmon tail 1 No. Tomatoes 2 Nos.
