After warming ourselves in the sauna, I bake a Christmas mint lemon olive oil cake, which we enjoy with a quiet coffee moment. Later in the day, I prepare Hilma’s early dinner, pan-seared beef with steamed broccoli, before cooking our own comforting meal: creamy beef tenderloin stew served with boiled potatoes, perfect for a cold winter evening. We end the day with tea, Fazer Christmas chocolates, and wrapping the remaining Christmas gifts, simple, calm, and full of warmth 🤍 I hope this vlog brings you comfort and inspiration for your own Christmas season.🕯️🌲❤️ Thank you so much for being here🌸💛 Sending a lot of hugs....💛 🎄CHRISTMAS MINT LEMON OLIVE OIL CAKE🎄 INGREDIENTS📌 A. Dry Ingredients: 230 g all-purpose flour 1 tsp baking powder ½ tsp baking soda 1 tsp cinnamon Pinch nutmeg Pinch of salt 1 tsp matcha tea B. Wet Ingredients: 150 ml olive oil 200 g sugar 2 large eggs (room temperature) Zest of 1 lemon Zest of 1 orange (Christmas twist!) 2 tbsp lemon juice 1 tsp vanilla extract 10–12 fresh mint leaves, finely chopped 120 ml milk + 1 tbsp lemon juice (buttermilk, mix and rest for 5-10 minutes) C.🎄CHRISTMAS LEMON GLAZE🎄 (Decoration) Mix: 120 g powdered sugar, 1 tbsp lemon juice, 1 tbsp milk INSTRUCTIONS📌 1. Prepare the pan and the oven Line a 9-inch pan with parchment paper. Preheat oven to 170°C. 2. Mix dry ingredients In a bowl, combine: Flour Baking powder Baking soda Cinnamon Nutmeg Salt Matcha Mix well and set aside 3. Mix wet ingredients In another bowl: Beat sugar and olive oil until creamy. Add eggs one at a time. Add lemon zest, orange zest, chopped mint leaves, vanilla extract, lemon juice, and buttermilk. 4. Combine Add dry ingredients into wet ingredients. Fold gently until smooth (do not overmix). 5. Bake Pour the batter into the pan Bake for 28–35 minutes. When toothpick comes out almost clean, it's ready. Cool completely before adding Christmas decorations. A fresh, fragrant, and cozy holiday cake with warm spices, citrus, and a snowy Christmas finish. Serve and Enjoy!
