Heat olive oil in a large pot over medium high heat. 2. Add onion & sauté for 5 minutes. Add in the thyme, oregano & salt/pepper to taste. Sauté for an additional 2 minutes while stirring so spices are evenly distributed. 3. Add sweet potato to the pot with 1/2 cup of water. Cover the pot and let steam for 5 minutes. 4. Uncover then add water & vegetable Broth. Stir well & bring to a boil over high heat. Once boiling, reduce the heat to medium-low simmer for 15 minutes. 5. Bring back to boil. Add the kale & pasta to the pot. Stir & cook for an additional 3-5 minutes. Serve & enjoy!
