Move the bones to a big kettle and add tomatoes, celery, carrots, onions, herbs, and black pepper. Cover with water and simmer for two days (adding water as needed before bed each evening). Drain the broth, then chill (I usually let it in the fridge overnight). The next morning scoop off the layer of fat. You can use it now, or if you want to further reduce the bone broth, simmer it down until it's about 1/3 to 1/2 of what it was.
