Ricky教室 名廚慢煮牛扒零失敗秘訣 「它是柔軟到差不多，不用牙都可以咬開，加上這個榛子牛油只要你控制得好，配牛扒吃簡直一流。」名廚Ricky滿足地說。 今次Ricky示範用現時大行其道的家用慢煮神棍來烹調西冷牛扒。第一個秘訣是在慢煮牛扒之前，先將它輕煎表面至上色，然後才拿去慢煮。「如果先將牛扒慢煮，肉的表面因為有些少收縮，自然不會這麼平直，跟著你放它在煎鍋上煎的時候，有些地方煎得不均勻，色澤便不夠漂亮。」他細心地說。 不少人都會下牛油、香草和蒜頭去煎牛扒，待牛油煮溶之後，不停用匙羹潑牛油上去牛扒是常見的步驟。「不要看她這樣潑，好像很容易，其實這個很考火候和時間的控制。如果火太猛，或潑的時間太長，煮到牛油近乎燒焦，不但影響牛扒的生熟程度，還會影響味道。」他建議將香草和蒜頭墊底，才放牛扒上去。這樣可以避免牛扒，因為接觸煎鍋太長時間而令它過熟，而且有助帶動蒜頭和香草的味道。 他強調只要火候控制恰當，潑完之後的牛油(Beurre noisette)還是金黃色，切記不要棄掉。因為它入口有些烘香果仁的味道，用來蘸牛扒好味得很。 慢煮牛扒 Sous Vide Steak 材料 (Ingredients) ： 西冷扒 1件 (250克) Sirloin steak 1pc (250g) 蒜頭 3粒 Garlic 3 pcs 牛油 75克 Butter 75g 百里香 10克 Thyme 10g 迷迭香 2克 Rosemary 2g 嗚謝：食嘜 #Ricky講煮講食 #香港名廚 #名廚 #張錦祥 #慢煮 #牛扒 #慢煮牛扒 #慢煮神棍 #OrenjiProduction #HKchef #RickyCheung #Ricky #Sousvide #Steak #Sirloin #Beurrenoisette
