Private tours are another story. Here’s the scoop: 1. Different Pizza Style at Every Stop: Every stop we make must feature a different style of pizza. We never go to two pizzerias of the same style, because then it just becomes a competition about which one did it better. 2. Only Eating Cheese Pizza: We are only eating cheese, sauce, and crust—no meats, no mushrooms, no truffles. To understand a pizzeria, you must start with the basic elements. Even though the other toppings are good, you really have to understand the basics before you step up to that stuff. 3. Surprise Destinations: I won't tell you where we're going. I don't want you immediately looking it up on your phone and making any conclusions about the pizza before you actually eat it. 4. Take Two Bites Before Seasoning: Avoid seasoning the pizza immediately. Take two full bites before you razzle-dazzle it with salt, pepper flakes, or anything else. You need to know what they're serving before you try to change it. 5. Non-Obtrusive Drink Pairings: If you choose to do a drink pairing, you need to get something that's non-obtrusive to the palate. Water is great, but also consider bubbly drinks, beers that are not big and bold, and wines that are not too tannic.
