Spend a slow and simple day of homemaking, seasonal cooking and exploring English countryside while it's raining outside. These days of spring are flying by so fast - it's almost summer! However, England had other plans and June began with lots of rain and ink skies - honestly my favourite type of weather for a cozy day at home. 🌸 Become a member of my channel and here: https://www.youtube.com/channel/UCpXLm3fQI7H-xgMwGkqZpRg/join MINESTRONE SOUP RECIPE: 1 onion (I used red, but any kind will do) 1 big or 3 small celery stalks 2 large or 4 small carrots 1 courgette (zucchini) 1 can of crushed tomatoes 1 can of butter beans Water - same amount as the can of tomatoes 325 ml Veggie or chicken stock Zest + juice of 1 lemon 125g of pasta Salt, pepper, herbs to taste I also added 1/2 tsp of ground cumin and cayenne pepper Thinly slice onions and celery. Chop carrots and courgettes into cubes. Sauté onions and celery with a bit of olive oil in a cast iron or big saucepan suitable for soup. When onions and celery are translucent and slightly caramelised, add courgette and carrots. Cook for 5 mins stirring occasionally, then add salt, pepper, herbs and spices, beans, crushed tomatoes, cup of water and stock and bring to a boil on a small heat. If your stock is salty, then don't add salt until the end or you may oversalt it! Simmer for 10 mins, add pasta and cook until it's al dente. To finish off, add lemon and zest.
