See you next week 🤍 ✨ In this video, I made a soft brioche with creamy coconut custard and whipped vanilla cream, but I used half of the ingredients from the original recipe and decorated the buns with apricots instead of berries. 🥐 Brioche Dough (halved in video) Ingredients: 250 g flour 100 ml warm milk 5 g dry yeast 25 g sugar 1 egg (plus egg yolk for brushing) A pinch of salt 40 g soft butter Steps: Mix warm milk, yeast, and sugar. Let foam for 10 minutes. Add egg, flour, salt — knead. Add butter, knead until smooth. Cover and rise for 1 hour. Divide into 6–7 pieces, shape with curled edges. Fill centers with coconut custard. Bake at 180°C for ~18–20 minutes. 🥥 Coconut Custard (halved in video) Ingredients: 250 ml milk 30 g sugar 20 g cornstarch 4 g vanilla sugar 50 g white chocolate 20–25 g shredded coconut Steps: Cook milk, sugar, starch, and vanilla on medium heat, stirring. Once thick, remove from heat and melt in the chocolate. Add shredded coconut, let cool. Chill for at least 2 hours. 🍦 Whipped Vanilla Cream (halved in video) Ingredients: 200 ml cold cream 2 tbsp powdered sugar ½ tsp vanilla (Optional: ½ tbsp shredded coconut) Steps: Whip all ingredients cold until stiff.
