Ray Mack’s Southern Breakfast Skillet Smothered Potatoes Watch to Video of me making this recipe: https://youtu.be/01uSFDpK6pE?si=q_mc42zoO43UBi41 Ingredients 4 medium potatoes, peeled and diced ½ red bell pepper, diced ½ yellow bell pepper, diced ½ yellow onion, diced ½ smoked sausage, cut into quarters 4 tablespoons unsalted butter 2 tablespoons Goya Sofrito Tomato Base (optional) 1 teaspoon spicy seasoning (or to taste) Salt and black pepper, to taste A few tablespoons of water (for steaming potatoes) Directions 1. In a large skillet, cook the smoked sausage until browned on both sides. Remove from skillet and set aside. 2. In the same skillet, add the diced potatoes. Cook for about 5 minutes, stirring occasionally, until they start to brown. 3. Add the peppers, onion, and butter. Stir in the seasoning, salt, pepper, and the Goya Sofrito (if using). 4. Cover and cook for 15–20 minutes, stirring occasionally. Add about 1 tablespoon of water at a time as needed to help steam and soften the potatoes. 5. When the potatoes are tender and a fork slides through easily, return the sausage to the skillet and stir everything together.
