Ingredients: - Broth 1 half chicken breast 1 onion quartered 2 garlic cloves crushed 1 tsp salt 1 tsp black pepper 1 tsp turmeric 2 bay leaves 3 cups water - Soup 1 onion diced 1 carrot grated 100 g mushrooms sliced 1 cup oats 3 cups chicken broth 2 cups milk 1 half chicken shredded 1 tsp salt 1 tsp black pepper 1/2 lemon juiced Instructions : 1. Prepare the Chicken Broth In a pot, place half of a chicken breast. Add 1 quartered onion, 2 crushed garlic cloves, salt, black pepper, turmeric, and bay leaves. Pour in enough water to fully submerge the chicken. Cover and cook over medium heat for 30 minutes. 2. Prepare the Soup Base While the chicken is cooking, prepare the vegetables: dice one onion, slice the mushrooms, and grate the carrot. In a separate pot, heat 2 tablespoons of oil, then sauté the onion, carrot, and mushrooms for about 1 minute, until slightly softened. Add 1 cup of oats to the pot, then pour in 3 cups of the prepared chicken broth. Cover and simmer over low heat for 10 minutes, stirring occasionally. 3. Add the Chicken and Finish the Soup Shred the cooked chicken breast and add it to the pot. Pour in 2 cups of milk and stir continuously over low heat for another 10 minutes, until the soup reaches a gentle simmer. Season with additional salt and pepper to taste. Stir in the cream, then slowly add the juice of half a lemon while stirring constantly to prevent curdling. 4. Serve Garnish with freshly chopped parsley and serve warm.
