INGREDIENTS 2lb. chicken, thighs and drumsticks, patted dry. 2 Tbs Olive oil Salt and Pepper 1.5 cups Yellow onions, peeled and finely diced 1 cup Bell peppers , red, yellow/ orange and green , diced small 1 tbs Garlic, chopped 1 tsp Tomato paste 1/2 tsp thyme, dry 1 tsp Oregano, dry 1 tsp Paprika 1/4 tsp Red pepper flakes 1 tsp Rosemary, fresh ( 1/2 tsp if using dry ), reserve some for finishing and garnish 2 Medium bay leaves 4 Yukon gold potatoes, peeled and diced bite size 2 Medium carrots, peeled and cut bite size 2 cups Chicken stock, or more as needed to slightly cover chicken ( or water ) 1 Tbs balsamic vinegar or red wine vinegar
