桃をたっぷり使った冷たいグラスデザートです！ 桃の皮も使うことで天然のピンク色のゼリーになります。 柔らかい食べごろの桃を使って、きれいなグラスに盛り、見た目も華やかに仕上げてください＾＾ 「自己流のお菓子作りからワンランク上のお菓子作りへ」 オンラインレッスンの詳細は 公式LINEから→https://bsybpc0i.autosns.app/line ----------------------------------------------------- Saki.＋オンラインレッスンHP　http://saki-plus.com/ メルマガ　http://saki-plus.com/maillesson/ Instagram　https://www.instagram.com/saki.plus/?... 初書籍！「手作りお菓子の教科書」 https://amzn.to/3OoBPub お仕事のご依頼は [email protected] まで。 ----------------------------------------------------- 【目次】Table of Contents 00:00　オープニング（Opening） 00:09　レシピ（Recipe） 00:20　 コンポートゼリー（Compote jelly） 04:59　 ブランマンジェ（Blancmange） 07:36　仕上げ（Finishing touches） 【材料】150mlグラス 4個分 / 4 glass of 150ml □ブランマンジェ（Blancmange） 桃 / peach　 180g グラニュー糖 / sugar　40g レモン汁 / lemon juice　8g 板ゼラチン / sheet gelatin　3.5g ※粉ゼラチンを使う場合は５倍量の水でふやかします 生クリーム35% / heavy cream　100g □コンポートゼリー（Compote jelly） 桃 / peach　 1個 水 / water　150g グラニュー糖 / sugar　45g レモン汁 / lemon juice　7g 板ゼラチン / sheet gelatin　3g ※粉ゼラチンを使う場合は５倍量の水でふやかします 【下準備】 ・桃はよく洗って水気を切っておく 【作り方】 □コンポートゼリー 板ゼラチンを氷水に入れてふやかす。 水にグラニュー糖、レモン汁を加え、電子レンジ600Wで1分30秒加熱する。(A) よく洗った桃（２個分）の種を取り除き、皮を剥く。剥いた皮はAに漬けておく。 剥いた桃を一口サイズにカットする。 そのうち180gはブランマンジェ用に取り分けておく。 残った桃と皮をAに入れ、ラップをして電子レンジ600Wで3分加熱する。 加熱後軽く混ぜて液体がピンク色になるまで少し置く。色が付いたら浸しておいた桃の皮をていねいに取り除いてから、ふやかしておいたゼラチンの水気を切って加え、混ぜて溶かす。 ゼラチンが溶けたらボウルを氷水に当てて冷やす。 しっかりと冷めて粗熱が取れたら、冷蔵庫で2時間以上冷やし固める。 □ブランマンジェ 板ゼラチンをふやかす。 取り分けておいた180gの桃をブレンダーの容器に入れ、グラニュー糖、レモン汁を加え、ハンドブレンダーで撹拌する。 全体が均一にピューレ状になったら耐熱ボウルに液体をうつし、ラップをして電子レンジ600Wで1分30秒加熱する。 ふやかしておいたゼラチンの水気を切ってから加え、混ぜる。 ボウルを氷水に当てて、冷ます。液体が20℃くらいまで下がったら、氷水からボウルをあげて、冷たい生クリームを加えながら混ぜる。 容器に4等分に流す。バットなどにうつして、冷蔵庫で2時間以上冷やす。 □仕上げ 冷え固まったコンポートジュレを軽くクラッシュし、しっかり固まったブランマンジェの上に４等分にバランスよく盛り付ける。 　　＼＼＼Bon appétit!／／／ 〜How to make it in English〜 【Preparation】 Wash and drain the peaches. 【How to make】 ■Compote jelly Blanch the gelatine in ice water. Add sugar and lemon juice to the water and heat in a microwave oven at 600W for 1 minute 30 seconds. (A) Remove the seeds from 2 well-washed peaches and peel. Soak the peeled skins in A. Cut the peeled peaches into bite-size pieces. Reserve 180 g of them for blancmange. Place the remaining peaches and peel in A, cover with plastic wrap and microwave on 600 W for 3 minutes. Mix gently after heating and leave to sit for a little while until the liquid turns pink. Once coloured, carefully remove the soaked peach peel, drain and add the blanched gelatine and stir to dissolve. When the gelatine has dissolved, place the bowl over ice water to cool. When the mixture is cool and the heat is removed, refrigerate for at least 2 hours to harden. ■Blancmange Thicken the gelatine. Put 180 g of the separated peaches into a blender container, add the sugar and lemon juice and blend with a hand blender. When the mixture is evenly pureed, transfer the liquid to a heatproof bowl, cover with plastic wrap and microwave at 600 W for 1 minute 30 seconds. Drain the blanched gelatine and add it to the mixture. Place the bowl in ice water to cool. When the liquid has dropped to about 20℃, lift the bowl out of the ice water and stir in the cold cream. Pour the mixture into a container in four equal portions.
