Sift the almond poodle and powdered sugar 2. Mix the egg whites with a pinch of granulated sugar with a hand mixer (high speed). When the mixture is just 80% thick, beat the remaining granulated sugar in three batches on medium speed until the mixture is just incorporated. 3. Mix the part of 2 into 1. Mix the rest of the mixture and put it into a squeeze bag. 4. On a griddle lined with baking paper, form a circle about 4cm in diameter 5. Bake at 130°C for about 1 hour to 1 hour and 20 minutes (Don't forget to preheat the oven to 130°C) - Fresh Cream 1. Combine the cream and granulated sugar in ice water and whip with a whipper. When it starts to come together, mix with a hand mixer. - Marron Cream Inside 1. Beat the butter at room temperature, then add the creme de marron and rum. - Marron Chantilly (Outside Creme) 1. Beat the fresh cream with a hand mixer and whisk in the creme de marron. - Finishing Touch 1. Top the meringue base with the marron cream and chestnuts, then the marron cream inside → whipped cream, and finally the marron chantilly. 2. Sprinkle with powdered sugar to finish. ==================================================================== ★ 材料 *10個分 - メレンゲ（フレンチメレンゲ） 卵白　54ｇ グラニュー糖　54ｇ 粉糖　45ｇ アーモンドプードル　54ｇ - マロンクリーム（内側クリーム） バター　27g 　　 クレームドマロン　108ｇ ラム酒　5～10ｇ - 生クリーム 生クリーム47％　200ｇ グラニュー糖　10ｇ - マロンシャンティ（外側クリーム） クレームドマロン　180ｇ 生クリーム47％　126ｇ *生をたてて混ぜる 渋皮栗　10個 溶けない粉糖　適量 ＊市販でお勧めのクレームドマロン（＝マロンクリーム）https://amzn.to/37WLj9W　 ★作り方： ＊内側からメレンゲ → マロンクリーム → 栗 → マロンクリーム → 生クリーム → マロンシャンテティ - メレンゲ ＊事前準備 オーブンを130°Cに予熱する 1. アーモンドプードルと粉糖をふるいにかける 2. 卵白にグラニュー糖をひとつまみ入れ、ハンドミキサー(高速)でまぜる。 　8 分たてになったら、残りのグラニュー糖を 3 回に分けて入れ(中速)に速度を落としてまぜる 3. 2 に 1 の一部を入れてまぜる。まざり切ったら残りを入れてさらにまぜ合わせ、絞り袋にいれる 4. オーブンペーパーを敷いた鉄板に、直径 4cm程度の円にしぼる 5. 130°Cで約 1 時間~1 時間 20 分焼く（事前に余熱を130℃にするのを忘れずに） 【生クリーム】 1. 生クリーム、グラニュー糖を合わせて氷水にあて、ホイッパーで泡立てる。まざってきたらハンドミキサーで混ぜる 【マロンクリーム(センター)】 1. 常温にもどしたバターをまぜ、そこにクレームマロン、ラム酒を入れさらにまぜる 【マロンクリーム】 1. 生クリームハンドミキサーでたて、クレームドマロンを合わせ泡立てる 【組み立て】 1. 土台のメレンゲにセンターのマロンクリーム、渋皮栗をのせ、さらにセンターのマロンクリーム、 その上に生クリームを絞り、最後にマロンクリームをかける 2. 仕上げに粉糖をふりかけ出来上がり。 #FOODMASTERJAPAN #フードマスタージャパン 料理　スイーツ　パティシエ　masterchef　グルメ　美食　料理研究家　簡単料理研究家 hommade
