基本のシュークリームの作り方 カスタードクリーム作りもレシピも、この動画で学べます！ How to Make Basic Japanese Cream Puffs You can even learn to make custard cream in this video! ↓＊English recipe below 【辻口博啓のホームクッキング】 ホームクッキングではお菓子のレシピのみならず、 料理に役立つ知識やコツを学ぶことができます。 これさえ見れば、家庭で作るお菓子のレベルが格段に上がります。 ぜひ実際に作ってみて下さい！ 00:00　オープニング/Opening 00:32　シュー生地作り/Dough 05:55　カスタードクリーム/ Custard Cream 08:58　仕上げ/Finish ==================================================================== ★ 材料 （6個分） シュー生地 - 水 70ml - 無塩バター 28g - 塩 1g - グラニュー糖 2g - 薄力粉 43g - 全卵 75g - アーモンド 適量 ＊全卵 （ぬり卵用に適量） カスタードクリーム - 牛乳 300ml - 薄力粉 25g - 卵黄 60g - グラニュー糖 45g - 無塩バター 18g - バニラエッセンス 適量 ★作り方： ＊下準備 オーブンの余熱を200℃にセットする 薄力粉をふるいにかける 【シュー生地】 ① 鍋に水、バター、塩、グラニュー糖を入れて火にかけ、沸騰させます。 ② ふるった薄力粉を加え混ぜ合わせます。 ③ 混ぜながら加熱します。生地が一つにまとまり、鍋底に薄い膜が張 るようになったら火から下ろします。 ④ 卵を少しずつ加え、その都度しっかりと混ぜ合わせます。最後の卵 は生地の様子を見ながら加え、固さを調整します。 ⑤ 絞り袋に入れ、5cmの円形に絞ります。 ⑥ ハケでぬり卵をぬり、アーモンドダイスをのせます。 ⑦ 200℃のオーブンで20分焼きます。（＊オーブンによって焼き時間は異なりますが、焼いている間はオーブンは開けない） ⑧ 焼き上がったらオーブンのドアを開けて余熱を逃し、さらに20分置いて乾燥焼きにします。 【カスタードクリーム】 ① 牛乳を鍋で沸騰直前まで温めます。 ② 卵黄をほぐした後にグラニュー糖を加え、白っぽくなるまで混ぜます。 ③ ②にふるった薄力粉を加えて混ぜます。 ④ ③に①を加え混ぜます。 ⑤ 鍋に戻し、混ぜながらコシがぬけるまで加熱します。 ⑥ 出来上がったらバターとバニラエッセンスを加え、溶かします。 ⑦ こし器でこし、氷水に当てて粗熱を取ります。 ＊冷めたら密着ラップして冷蔵庫に移します。 【仕上げ】 ① シューの底に穴をあけ、丸口金でカスタードクリームを絞ります。 ② 表面に粉糖をふって完成 好きなだけカスタードクリームを詰め込める幸せさといったら！😍😍😍 ==================================================================== "Hiro's Home cooking !" 3 Times World Pastry Champion - Japanese Master Pastry Chef, Hiro Tsujiguchi's Home Cooking!! Finishing touches (1) Make a hole in the bottom of the puff pastry and squeeze the custard cream into the hole with a round tip. (2) Sprinkle the surface with powdered sugar.
