材料： 桂花魚1條起肉 （重量最少1斤以上） 蛋白1隻 紹興酒1碗 糟鹵1碗 桂花糖1小碗 鎮江醋1湯匙 雲耳、薑適量 胡椒粉少許 生粉、馬蹄粉適量 做法： 1.桂花魚片洗乾淨擠乾水 2.魚片用胡椒粉、鹽、紹興酒、蛋白、生粉醃15分鐘左右備用 3.雲耳浸水，汆水過冷河，放在碟內墊底 4.煮滾水，收細火，慢火浸熟魚片，小心撈出備用 5.燒紅鑊爆香薑片後取出，加酒、糟鹵、桂花糖、鎮江醋及適量水煮滾 6.加入桂花魚片 7.取適量馬蹄粉加水開勻，慢慢加入收汁至喜愛的濃稠度 8.鋪在碟中的雲耳上趁熱食 Ingredients: Mandarin fish 1 pc (at least 1 catty), fillet Egg white 1 pc Shaoxing wine 1 bowl Superior pickle sauce 1 bowl Sweet osmanthus sugar 1 small bowl Zhenjiang vinegar 1 tbsp Black fungus Some Ginger Some Ground white pepper Little Corn starch Some Water chestnut starch Some Steps: 1. Clean fish fillet and pat dry. 2. Cut fillet into slices, marinate fillet slices with ground white pepper, salt, Shaoxing wine, egg white, and corn starch for about 15 minutes. 3. Soak black fungus, boil for a few minutes to remove impurities, then rinse with cold water. Line prepared black fungus on the bottom of the plate. 4. Boil water, reduce heat to low, cook fish slices and remove from water when ready. 5. Heat pan and stir-fry ginger to release aroma. Remove ginger from pan, add Shaoxing wine, pickle sauce, osmanthus sugar, Zhenjiang vinegar, and water to pan, bring to a boil. 6. Add fish slices. 7. Mix water chestnut starch with water, add mixture slowly to the pan to reduce the sauce to the desired consistency. 8.
