#煮題COOK2 EP 29 包你驚喜 麵包文化在香港不斷演變, 麵包可以是一種潮流、一種生活態度。 近年流行的”生吐司”, 不少人冒名排隊一試, 今集Jacky 邀請了台灣麵包達人”大兵老師” 做嘉賓, 揭開製作生吐司秘技。 Jacky 及Ricky 當然不會”袖手旁觀”, Ricky 師傅教大家用新鮮雞肝做出一個媲美鵝肝醬的 超幼滑雞肝醬, 配上生吐司, 吃出非凡滋味。 至於喜愛甜食的Jacky, 改良了一道網紅爆漿髒髒吐司, 打卡一流!! 大兵老師 食譜“ 生吐司” 材料 : (T: 1058 G) 高筋麵粉 200克 T55 300克 鹽 8克 上白糖 50克 酵母粉 6克 牛奶 340克 老麵 50克 牛油 25克 忌廉芝士 75克 藍紋芝士 5克 做法: 1.將所有材料, (除牛油、忌廉芝士及藍芝士外)攪拌至光滑階段, 再加入餘下材料攪拌至完成階段(攪拌溫度28度) 2.麵糰作基本發酵60分鐘 3.將麵糰分割成200克一個, 一模3個(剩餘麵糰可做長餐包), 滾圓後中間發酵15分鐘 4.進行首次桿捲後, 鬆弛15分鐘 5.進行第2次桿捲後, 放入黑吐司模內,最後發酵至模7分滿 6.預熱焗爐, 以180度焗20分鐘, 出爐放涼即可使用 Ricky 食譜“雞肝醬生吐司 ” 雞肝醬材料: 鮮雞肝 200克 牛油 50克(封面用) 香草牛油汁料: 牛油 200克 乾蔥 50克(切絲) 百里香 2條 忌廉 50克 Masala 50克 香草牛油汁做法： 1.鍋中先下50克牛油, 煮融後加入乾蔥及百里香, 小火煮至乾蔥軟身 2.加入Masala煮至揮發一半, 加入忌廉煮杰後熄火, 加入餘下牛油拌勻成香草牛油汁 雞肝醬做法: 1.雞肝去筋, 以70度水浸煮3分鐘, 取出待用 2.將雞肝及香草牛油汁放入攪拌機打成茸, 倒出後過濾, 下少許鹽調味, 盛起放玻璃容器內 3.將50克牛油放微波爐叮1分鐘, 隔出牛油清, 倒入肝醬上封面, 放雪櫃定型 Jacky 煮 “網紅爆漿髒髒吐司 ” 材料: 厚切吐司 兩塊 OREO餅乾 120g 雞蛋 1隻 牛奶 35g 牛油 20g 爆漿材料 : 牛油 20g 忌廉芝士 40g 牛奶 150g 餅乾夾心餡 30g 海鹽 少許 做法： 1.將OREO餅乾夾心餡刮出，留用，然後將餅乾壓碎，備用。 2.雞蛋與牛奶打勻，然後放入吐司，兩面均勻沾滿牛奶蛋液。 3.鍋中加入牛油以慢火煮融，然後放入沾滿牛奶蛋液的吐司，慢火兩面煎香至微焦帶脆，夾起，放在蝶上，用湯匙在吐司中心壓出凹位。 4.將牛奶慢慢倒入芝士及夾心餡攪拌，至完全融合，鍋中加入爆漿材料煮熱，然後倒在吐司中心，最後灑上餅乾碎，吃時將吐司切開，讓爆漿餡流出，達至爆漿效果。 貼士 1.因為牛油燃點較低，煎麵包時要用慢火，盡量不要令煎鍋冒煙，否則煎出來的吐司色澤便不夠金黃，焦黑不美觀。 2.煮爆漿餡前，一定要將牛奶與芝士及夾心餡融合，否則煮出來的爆漿餡便會起粒，不夠滑溜了。 #煮題COOK2｜星期一至五 8:30 PM｜HOYTV 77台 🎥【煮題COOK2 】更多影片 https://youtube.com/playlist?list=PLkqOzsNoWwYW5dMiIX3ifTBKI1HYII497 Follow US: YouTube: https://www.youtube.com/c/好好制作 IG: https://www.instagram.com/howhowproductionshk/ FB: https://www.facebook.com/Howhowproductions 【煮題COOK】Facebook : https://www.facebook.com/ricky.jacky.cook 【煮題COOK】IG： https://www.instagram.com/ricky_jacky_cook/ #煮題COOK2 #HOYTV77台 #好好制作 #Ricky #Jacky #77台 #HOYTV #余健志 #張錦祥 #食譜 #食譜分享 #chef #大廚 #廚師 #RickyCheung #JackyYu #煮題COOK
