🟢食材： 糯米 600 克 臘腸 1 條 潤腸 1 條 臘肉 1/4 條 雞蛋 1 個 冬菇(浸軟) 適量 蝦米 適量 紅蔥頭、蔥、芫荽 適量 炸花生 適量 生抽 1 湯匙 老抽 ½湯匙 糖 1 茶匙 🟢做法： 1️⃣ 糯米用水浸泡半小時，之後洗淨，瀝乾水分。加入少許鹽和油，用電飯煲煮成飯。 2️⃣ 蝦米用水浸泡5分鐘，洗淨後可切碎或不切，冬菇切小丁備用。 3️⃣ 臘腸和臘肉用熱水洗淨，臘腸可以切丁或切片，臘肉切小丁。 4️⃣ 熱鑊下油爆香紅蔥頭，加入蝦米爆香，再加入臘腸和臘肉爆香，加入冬菇爆香，放1茶匙糖、1湯匙生抽、½湯匙老抽，爆香所有材料後盛出備用。 5️⃣ 飯煮滾後收水時把炒好的臘味加進去，煮好之後等5-10分鐘才開蓋。 6️⃣ 加入炸花生、芫荽、蔥拌勻即可享用。 🟢Ingredients: Glutinous rice - 600g Chinese pork sausage - 1 piece Chinese pork liver sausage - 1 piece Chinese cured pork belly - 1/4 piece Egg - 1 Dried shiitake mushrooms (soaked) - as needed Dried shrimps - as needed Shallots, spring onions, coriander - as needed Fried peanuts - as needed Light soy sauce - 1 tbsp Dark soy sauce - ½ tbsp Sugar - 1 tsp 🟢Cooking Directions: 1️⃣ Soak the glutinous rice in water for half an hour, then rinse and drain. Add a pinch of salt and oil, and cook it in an rice cooker. 2️⃣ Soak the dried shrimp in water for 5 minutes, then wash and chop them (optional). Cut the dried shiitake mushrooms into small cubes. 3️⃣ Rinse the Chinese pork sausage, Chinese pork liver sausage, and Chinese cured pork belly with hot water. Cut the Chinese pork sausage into small pieces or slices, and cut the Chinese cured pork belly into small cubes. 4️⃣ Heat the oil in a wok and sauté the shallots until fragrant. Add the dried shrimps and sauté until fragrant. Then add the Chinese pork sausage, Chinese pork liver sausage, and Chinese cured pork belly and stir-fry until fragrant. Add the dried shiitake mushrooms and stir-fry until fragrant. Add 1 tsp of sugar, 1 tbsp of light soy sauce, and 1/2 tbsp of dark soy sauce, and stir-fry until all ingredients. Remove from heat and set aside. 5️⃣ After the rice boils and the water is almost absorbed, add the sautéed cured meat and continue cooking.
