Today in our Stop Motion first, we are taking your standard Choc-Chip Cookie to the next level by making Brown Butter and incorporating it into the batter! These bad boys have everything you want in a Cookie! Slightly Crisp outer shell, Chewy inside and an elevated taste with the inclusion of Brown Butter! Perfect with a glass of milk! @@@@@@@@@@@@@@@@@@@@@ Ingredients:- 65G Bread Flour 50G Plain Flour 120G Unsalted Butter 100G Dark Brown Sugar 50G Sugar 1/2tsp Baking Soda 1/2tsp Coffee Powder 1/2tsp Salt (If using table salt, add only 1/4tsp) 1/2 An Egg 1tsp Vanilla Paste 70g Dark Chocolate 45g Choc Chip Method:- 1. Mix together Bread and Plain flour set aside. 2. In a medium saucepan add in the Butter and cook over medium-low heat for about 5-6mins until butter becomes brown and you see milk solids darken. Stirring constantly. Let cool to room temperature. 3. Meanwhile chop Dark Chocolate into desired chunks. 4. Once Brown Butter is cooled add into a large bowl and add in the two sugars and Coffee Powder. Whisk for 2-3mins until light and fluffy. 5. Add in the Vanilla and whisk until combined then add in the Egg and whisk until well combined. 6. Fold in the Flours, Baking Soda and Salt. 7. Fold in the two Chocolates until combined. 8. Cover and refrigerate for 1 Hour or more. 9. Pr-heat oven at 180C and line a baking tray with parchment paper. 10. Scoop out about 1tbsp Cookie Dough onto the tray about 3cm apart and lightly flatten the top. 11. Bake for 12-13mins at 180C. 12.
