I visit a café to do some work, cook salmon soup, reflect on what nature can teach us about resilience, pick some wildflowers and buy more plants for the balcony. // The café I visit: Stockfleths Gamlebyen- Adress: Munkegata 2, 0656 Oslo The restaurant: Lorry- Adress: Parkveien 12, 0350 Oslo LOHIKEITTO, SALMON SOUP FROM FINLAND 400-500 grams of Salmon (in cubes) 2 table spoons of butter 1 leek 2-3 carrots 500 grams of potatoes 2 bay leaves 1 liter of fish stock (use less if you like the soup to be thicker) 1 large handful of Dill 3 deciliters of cream Salt and pepper to taste A generous squeeze of lemon Melt the butter, and fry the leek Add the carrots and potatoes along with the bay leaves, fish stock (use less than 1 liter if you want the soup to be thicker) and dill. Add salt and pepper til you're happy with the taste. Simmer with the lid on till the veggies are nearly done. Reduce the heat. Add the cream. Let it simmer gently for a few more minutes til the veggies are done. Turn off the heat. Add the salmon, mix gently. Leave for about 5-6 minutes to cook the Salmon. Serve with a squeeze of lemon and some bread. 😋
