We headed back from the Copper River with an abundance of fish- now its time to put them up for winter! We fired up the new smoker Dennis built, brined and smoked our catch, before canning it up. We use every part- bellies, carcass, and smoke the roe, too! These fish will go into the winter stores, and we are grateful to be able to bring home a years worth of food from the river. After processing for days, we were finally finished and all the salmon put up safely. We capped the day with a delicious meal of smoked roe, wild foraged mushrooms, homemade mac & cheese over the campfire and a salad from the garden.
