#백종원 #파개장 #대파농가화이팅 파 소비 촉진을 위해 만들었는데 정~말 맛있습니다! 파를 많이 넣으면 넣을수록 맛있으니 꼭 끓여 드셔보세요~ =========================== 파개장 [재료] 소 불고기용 400g 대파 6대(800g) 식용유 1/4컵(30g) 참기름 1/4컵(30g) 당면 100g 물 11컵(2L) 다시마 10장(10g) 간 마늘 2큰술(30g) 국간장 4큰술(40g) 후춧가루 적당량 꽃소금 1큰술(10g) 멸치 액젓 3큰술(30g) [매운 양념 재료] 굵은 고춧가루 2.5큰술(25g) 고운 고춧가루 1큰술(10g) 물 4큰술(40g) 국간장 2큰술 (20g) 간 마늘 1큰술(15g) 청양고추 3개(20g) [만드는 법] 1. 당면은 미리 물에 불려 준비한다. 2. 대파를 반 갈라 4~5cm 길이로 잘라준다. 3. 소고기를 먹기 좋은 크기로 잘라준다. 4. 냄비에 식용유와 참기름을 두르고 소고기를 넣고 볶아준다. 5. 소고기가 적당히 익었을 때 대파를 넣고 볶아준다. 6. 숨이 죽을 정도로 대파가 볶아지면 국간장, 멸치 액젓을 넣고 볶아준다. 7. 물과 다시마를 넣고 끓여준다. (충분히 우러난 다시마는 기호에 맞게 채 썰어 넣어준다.) 8. 간 마늘을 넣어주고, 간은 꽃소금을 넣어 맞춰 오래 끓여준다. 9. 불린 당면을 따로 끓는 물에 익혀준다. 10. 그릇에 당면과 파개장을 담아 후춧가루 뿌려 완성한다. [매운 양념장 만드는 법] 1. 청양고추는 잘게 썰어 준비한다. 2. 볼에 굵은 고춧가루, 고운 고춧가루, 물, 국간장, 간 마늘, 다진 청양고추를 섞어준다. Pagaejang (Green onion soup) [Ingredients] 400g bulgogi beef 6 stalks (800g) green onion 1/4 cup (30g) cooking oil 1/4 cup (30g) sesame oil 100g glass noodles 11 cup (2L) water 10 pieces (10g) kelp 2 tbsp (30g) minced garlic 4 tbsp (40g) soup soy sauce Pepper 1 tbsp (10g) fine salt 3 tbsp (30g) fermented anchovy sauce [Spicy sauce] 2.5 tbsp (25g) coarse red pepper powder 1 tbsp (10g) fine red pepper powder 4 tbsp (40g) water 2 tbsp (20g) soup soy sauce 1 tbsp (15g) minced garlic 3 (20g) Cheongyang peppers [Directions] 1. Soak glass noodles in water beforehand. 2. Slice the green onion in half and cut it into 4-5 cm. 3. Cut the beef into a decent size. 4. Add cooking oil and sesame oil to a pan and fry the beef meat. 5. When the meat is somewhat cooked, add the green onion and stir-fry. 6. Once the green onion has softened, add soup soy sauce and fermented anchovy sauce and stir-fry. 7. Add water and kelp, and simmer. (Once the soup is infused with kelp, slice the kelp finely and add back into the soup.) 8. Add minced garlic, season with fine salt, and simmer for a long time. 9. Cook the soaked glass noodles separately. 10. Add the cooked glass noodles and green onion soup in a bowl and finish with pepper. [How to make the spicy sauce] 1. Finely chop Cheongyang peppers. 2.
