#백종원 #김치 #수제비 얼큰한 김치 수제비입니다! 칼국수면, 떡국떡, 수제비 등 뭐든지 다 어울립니다~ ============================== 김치수제비 [재료] *수제비 반죽 밀가루 300g 물 180g 꽃소금 2g *김치 수제비 물 1.5L 멸치가루4큰술(20g) 간마늘1큰술(15g) 신김치1/4포기(500g) 고춧가루1큰술(5g) 국간장3큰술(30g) 멸치액젓3큰술(30g) 애호박1/2개(150g) 양파 1/4개(50g) 청양고추3개(20g) 대파1컵(80g) 꽃소금 적당량 [만드는 법] *수제비 반죽 1. 큰 볼에 밀가루를 체에 내려준다. 2. 소금을 넣어 섞어준다. 3. 물을 조금씩 넣어가면서 숟가락을 이용하여 섞어준다. 4. 반죽이 뭉치기 시작하면 손을 이용하여 반죽한다. 5. 봉지에 반죽을 넣고 공기가 안 들어가도록 묶어 10분 정도 숙성시킨다. *김치 수제비 1. 냄비에 물, 멸치가루를 넣어 끓인다. 2. 육수가 끓으면 신김치, 간마늘, 고춧가루, 국간장, 멸치액젓을 넣어 끓인다. 3. 애호박은 채 썰고 청양고추, 대파는 송송 썰어 준비한다. 4. 육수의 간을 보고 불을 줄인 후 수제비 반죽을 뜯어 넣는다. 5. 한번 끓어오르면 채소를 넣고 끓인다. 6. 수제비가 익으면 완성접시에 담고 기호에 따라 후춧가루를 뿌린다. Sift the flour into a large bowl. 2. Mix in the salt. 3. Add a little bit of water at a time and mix with a spoon. 4. Once the dough starts to form, knead with hands. 5. Put the dough in a bag, seal airtight, and let rise for 10 minutes. *Kimchi sujebi 1. Add water and anchovy powder to a pot and bring it to boil. 2. When the broth starts to boil, add sour kimchi, minced garlic, red pepper powder, soup soy sauce, and fermented anchovy sauce. 3. Slice the summer squash, and chop Cheongyang pepper and green onion. 4. Taste the broth, reduce the heat, and add the sujebi dough by pulling with hands. 5.
