سر طبخ رز المطاعم الحضرمي بطريقة سهلة وفخمة! The secret of cooking the most delicious basmati rice! Hadrami restaurant style! المكونات: ثلاثة أكواب من أرز بسمتي طويل الحبة أربع بصل (600 جرام) مفروم خمسون جرام من معجون الطماطم ملعقة كبيرة ثوم (15 جرام). ثلاث حبات طماطم (400 جرام) مقطعة مكعبات نصف ملعقة صغيرة من كل من القرفة والهيل والقرنفل والكزبرة والكمون والفلفل الأسود ربع ملعقة صغيرة ملح ملعقة صغيرة من مرقة الخضار ثمانية أكواب من الماء ملعقة كبيرة ملح ملعقة صغيرة من بذور الكمون ملعقة صغيرة من بذور الكزبرة ملعقة صغيرة فلفل أسود أعواد القرفة ، أوراق الغار ، الهيل ، والقرنفل الفلفل الحار زعفران او سازون (للتلوين) زيت نباتي (للقلي) نصف كوب زبيب (اختياري) التعليمات: اغسل أرز البسمتي بالماء البارد حتى يصبح الماء صافياً. نقع الأرز في الماء لمدة 20 دقيقة. في مقلاة كبيرة ، اقلي البصل المفروم بالزيت النباتي حتى يتكرمل. أخرجي نصف كمية البصل من المقلاة واتركيها جانباً لاستخدامها لاحقًا. صفي بعض الزيت النباتي من المقلاة واحتفظي به لوقت لاحق. في نفس المقلاة ، أضيفي معجون الطماطم والثوم ومكعبات الطماطم والقرفة والهيل والقرنفل والكزبرة والكمون والفلفل الأسود ومرق الخضار. امزجي جميع المكونات معًا. قومي بطهي الصلصة على نار خفيفة لمدة 15 دقيقة. ضعيها جانبا حتى وقت لاحق. في وعاء منفصل ، احضري 8 أكواب من الماء حتى يغلي. يُضاف بعضا ً من البصل المقلي والزيت النباتي المحفوظ وملعقة كبيرة من الملح وبذور الكمون وبذور الكزبرة والفلفل الأسود وعيدان القرفة وورق الغار والهيل والقرنفل. دع الماء يغلي مع المكونات لمدة 10 دقائق. اخرجي البهارات الكاملة. صفي الأرز المنقوع وأضيفيه إلى القدر بالماء المغلي. أضيفي فلفل الحار و اغلي الأرز لمدة 10 دقائق. باستخدام مقلاة أو قدر ، أضيفي نصف كمية الأرز. ثم تُسكب الصلصة التي تم إعدادها مسبقًا فوق الأرز. أضيفي باقي الأرز. صبي محلول الزعفران أو الزعفران فوق الارز يُزين الطبق بالبصل المقلي والزبيب (اختياري). يُطهى الأرز على نار خفيفة لمدة 30 دقيقة. Become a supporting member and help this channel grow from here: https://www.youtube.com/channel/UC1JoCw5K0iVcmA1Sf5SQv9g/join Ingredients: Three cups of long-grain basmati rice Four onions (600 grams), chopped Fifty grams of tomato paste One tablespoon of garlic (15 grams) Three tomatoes (400 grams), diced Half teaspoon of each of cinnamon, cardamom and cloves, coriander, cumin, and black pepper One fourth of a teaspoon of salt One teaspoon of vegetable bouillon Eight cups of water One tablespoon of salt One teaspoon of cumin seeds One teaspoon of coriander seeds One teaspoon of black pepper Cinnamon sticks, bay leaves, cardamom, and cloves Hot peppers Saffron or sazon (for seasoning) Vegetable oil (for frying) Half a cup of raisins (optional) Instructions: Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 20 minutes. In a large pan, fry the chopped onions in vegetable oil until they are caramelized. Remove half of the onion batch from the pan and set aside for later use. Strain some of the vegetable oil out of the pan and save it for later. In the same pan, add tomato paste, garlic, diced tomatoes, cinnamon, cardamom, cloves, coriander, cumin, black pepper, salt, and vegetable bouillon. Blend all the ingredients together. Cook the sauce over low heat for 15 minutes. Set it aside until later. In a separate pot, bring 8 cups of water to a boil. Add the fried onions, the saved vegetable oil, 1 tablespoon of salt, cumin seeds, coriander seeds, black pepper, cinnamon sticks, bay leaves, cardamom, and cloves. Let the water boil with the ingredients for 10 minutes. Remove the whole spices. Drain the soaked rice and add it to the pot with the boiling water. Add hot peppers. Boil the rice for 10 minutes. Using a wok or a pot, add half of the rice batch. Pour the sauce made earlier on top of the rice. Add the rest of the rice. Season with saffron or sazon. Garnish the dish with fried onions and raisins (optional). Cook the rice over low heat for 30 minutes. Serve hot and enjoy! #delicious #tasty #rice #basmatirice #رز_حضرمي
