I put my homemade version of the Starbucks Chocolate Pistachio Loaf to the test! In this video, I recreate the popular bakery loaf side-by-side with the real one to see how close we can get in flavor, texture, and appearance. This rich, moist loaf features swirls of pistachio butter and dark chocolate, topped with roasted pistachios for that classic coffee shop finish. Let’s see how the copycat compares! Copycat Chocolate Pistachio Loaf Base Batter • ½ cup (113g) butter, softened • 2 Tbsp (28g) neutral oil (canola or vegetable) • 1½ cups (300g) granulated sugar • 3 large eggs (220g without shells) • ½ cup (120g) heavy whipping cream • ¼ cup (60g) sour cream or Greek yogurt (any kind — I used fat-free) • 1¾ cups (220g) all-purpose flour, sifted • 2 tsp (8g) baking powder • ½ tsp (3g) salt • ½ tsp vanilla extract • ½ tsp almond extract • Green gel food coloring (optional) Pistachio Portion • ⅓ cup (90g) pistachio butter • Optional: a small amount of green gel food coloring for enhanced color ( Here is a link to the video where I make pistachio butter) https://www.youtube.com/watch?v=CGtXZVo7Khs Chocolate Portion • 2 Tbsp (15g) unsweetened cocoa powder, sifted • Approximately 2 oz (60g) dark chocolate, melted and slightly cooled (I used one 1.65 oz 72% dark chocolate bar from Trader Joe’s, melted.) To prepare: • Sift cocoa powder directly into the batter and mix gently. • Melt chocolate in the microwave in short intervals, stirring until smooth. • Let cool slightly. • Fold melted chocolate into the batter until fully incorporated. ⸻ Topping • Chopped or whole roasted pistachios ⸻ Instructions 1️⃣ Prep Preheat oven to 325°F (165°C). Line a 9 x 5-inch (22 cm) loaf pan with parchment paper. ⸻ 2️⃣ Make Base Batter Beat butter, oil, and sugar for 3–4 minutes until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in cream, sour cream (or greek yogurt), vanilla, and almond extract. Add flour, baking powder, and salt. Mix just until combined — do not overmix. Divide evenly into two bowls. ⸻ 3️⃣ Flavor the Batters Pistachio: Mix in pistachio butter and optional green coloring. Chocolate: Sift cocoa into batter. Fold in melted, slightly cooled dark chocolate. ⸻ 4️⃣ Layer Spoon or pipe alternating ribbons into the loaf pan. Lightly tap to remove air bubbles. Swirl once gently if desired. ⸻ 5️⃣ Top & Bake Sprinkle chopped or whole roasted pistachios over the top. Gently press them in slightly. Bake at 325°F for 75–90 minutes. (Mine baked for 80 minutes.) A toothpick should come out with moist crumbs, not wet batter. You can also use an instant read thermometer to test the center. It should ready at least 200 degrees F. Cool 15–20 minutes in pan, then remove to a cooling rack and cool completely before slicing.
