One-Pot Creamy White Chicken Chili | A Family Favorite!

You can use rotisserie chicken or cook raw chicken right in the pot. Finish it with cream cheese for a rich, creamy texture and top it with all your favorite chili fixings. Ingredients • 1 rotisserie chicken, shredded or 2 pounds raw chicken breast, diced • 2 tablespoons olive oil • 1½ yellow onions, diced • Yellow bell peppers or small yellow peppers, diced (about 1–2 peppers) • ½ jalapeño pepper, finely diced • 3 large cloves garlic, minced • 32 ounces chicken broth • 2 (15-ounce) cans white beans (Great Northern beans), drained and rinsed • 2 (4-ounce) cans diced green chilies • About 8 ounces frozen fire-roasted corn • 1 teaspoon ground cumin • 2 teaspoons chili powder • 1 teaspoon salt (or to taste) • Black pepper, to taste • 1 tablespoon dried cilantro • 4 ounces cream cheese, cubed or ¼ cup heavy cream Instructions 1. Heat the olive oil in a large pot or Dutch oven over medium heat. 2. Add the diced onions, bell peppers, and jalapeño. Cook until softened, about 5–7 minutes. 3. Stir in the minced garlic and cook for 1–2 minutes until fragrant. 4. If using raw chicken breast, add it to the pot and cook until the pink is gone. (If using rotisserie chicken, add it later with the broth.) 5. Add the chicken broth, white beans, green chilies, corn, cumin, chili powder, salt, black pepper, and dried cilantro. 6. Bring to a simmer and cook for 15–30 minutes, stirring occasionally. 7. Stir in the cream cheese until melted and fully incorporated, or add heavy cream and stir to combine. 8.
