Ingredients For the Soup: • 1 pound lean ground beef • 1 pound ground Italian sausage • 1 medium onion, finely chopped • 1 tablespoon olive oil • 4 large garlic cloves, finely minced • 1 teaspoon onion powder • 1 teaspoon dried oregano • 2 teaspoons dried basil • 1 teaspoon dried thyme • 3 tablespoons tomato paste • Salt and pepper to taste • 1 (28-ounce) can chunky crushed tomatoes • 1 (32-ounce) container beef broth (or chicken broth) • 2–4 cups additional water (as needed) • Red pepper flakes (to taste) • ½ pound lasagna noodles, broken into bite-sized pieces • Chopped Italian parsley (for the sauce) For the Cheese Topping: • 1 (16-ounce) container ricotta cheese • ½ cup freshly grated mozzarella cheese • ½ cup freshly grated Parmesan cheese • Pinch of salt and pepper • Chopped Italian parsley Instructions 1. Heat olive oil in a large stockpot over medium heat. 2. Add chopped onion and sauté until translucent. 3. Add minced garlic and sauté until fragrant. 4. Add ground beef and Italian sausage. Cook until no longer pink. Drain excess grease if needed. 5. Stir in onion powder, oregano, basil, thyme, salt, pepper, tomato paste, crushed tomatoes, broth, 2 cups of water, red pepper flakes, and chopped parsley. Bring to a boil. 6. Break lasagna noodles into bite-sized pieces. 7. Once soup is boiling, add noodles and cook until tender. Add more water as needed for desired consistency. 8. In a separate bowl, combine ricotta, mozzarella, Parmesan, salt, pepper, and parsley. 9. Ladle soup into bowls and top with a generous spoonful of the cheese mixture. Serve hot and enjoy!
