If you’re in the mood for Mexican-inspired comfort food, this chicken enchilada casserole, AKA King Ranch Casserole, is a must-try. It’s easy enough for a weeknight dinner, reheats beautifully for leftovers, and even freezes well in individual portions for busy days. All the flavor of enchiladas—without the rolling. Ingredients • 1 rotisserie chicken, deboned and shredded or chopped • 12–15 corn tortillas • Canola oil, for lightly frying tortillas • 16 ounces sour cream • 1 (10.5-ounce) can cream of chicken or cream of mushroom soup • 1 (10-ounce) can Rotel tomatoes, undrained • 1 (4-ounce) can diced green chilies • 2 (10-ounce) cans green enchilada sauce • 1 pound shredded Monterey Jack cheese, divided • Half for the sauce • Half for the topping • Black pepper, to taste • Chopped green onions, for garnish • Chopped fresh cilantro, for garnish Instructions 1. Prepare the Sauce In a large bowl, combine: • Sour cream • Cream of chicken (or mushroom) soup • Rotel tomatoes • Green chilies • Green enchilada sauce • Half of the shredded Monterey Jack cheese Mix until smooth and well combined. Season with black pepper to taste. 2. Prepare the Tortillas Heat a small amount of canola oil in a skillet over medium heat. Lightly fry each corn tortilla for just a few seconds per side—just until softened and pliable. Remove to a plate and set aside. 3. Assemble the Casserole • Preheat oven to 350–375°F (see baking note below). • Spray a 9×13-inch baking dish with cooking spray. • Spread a thin layer of sauce on the bottom of the dish. Layer like a lasagna: 1. Corn tortillas (single layer) 2. Sauce mixture 3. Shredded chicken Repeat layers until ingredients are used, ending with a layer of sauce. Sprinkle the remaining shredded cheese evenly over the top. 4. Bake Bake uncovered at 350–375°F for about 45 minutes, or until: • The casserole is bubbly all the way through • The top is lightly browned Note: I started at 350°F and increased to 375°F when it needed a little extra heat. Adjust based on your oven. 5. Finish & Serve Remove from the oven and let cool slightly. Garnish with chopped green onions and fresh cilantro before serving.
