Easy to make, freezer-friendly, and perfect for weeknights, potlucks, or a cozy family dinner. ✨ What makes this recipe special: • Tender cauliflower and potatoes baked in a silky cheddar sauce • Caramelized onions for deep, savory flavor • Simple ingredients, big flavor, and minimal cleanup • Perfect for meal prep, freezing, or family gatherings 📌 Ingredients: - One large yellow onion, sliced - Butter: 6 tbsp, divided - Olive Oil: 1 tbsp - Dried thyme: 1/2 tsp - One medium head cauliflower, about 1.5 to 2 lbs - 2 large cloves of garlic - Flour: 4 tbsp - Whole Milk: 3 cups, about 700 ml - Mustard powder: 1/2 tsp - Salt : 1/2 tsp - Smoked Paprika: 1/4 tsp - Black pepper: 1/4 tsp - Ground nutmeg: 1/8 tsp - Cayenne pepper: a pinch ( about 1/8 tsp) - Yukon gold or russet potatoes, slice thinly ( 1/8 inch thick) enough to cover the bottom of your baking dish - Cheddar cheese: 2 1/2 cups for the sauce and 1 cup for topping - Soft cream cheese: 2 tbsp, at room temperature - Minced parsley for garnishing ⸻ ⏱️ Timestamps & 📝 Short recipe snapshot 00:00 Slicing and starting to caramelize the onions 00:48 Cutting, blanching and drying the cauliflower 02:39.
